When Even Delahanty returned to the United States after spending two years in the Amazon rainforest with the Peace Corps, she wanted to make a connection between her home and the place she loved.

Whatever he does, he wants it to mean something. Delahanty serves in the Peace Corps as a community economic development specialist. He knew that his business had to be run in a way that created financial opportunities.
“The only economic opportunity for these small farmers is often very extractive,” Delahanty said. “They have to leave their land and move to the city. There aren’t many ways to make a living while respecting and protecting the land.”
So Delahanty came up with a win-win business opportunity. Surinamese farmers became his first suppliers, gathering wild acai berries and processing them into acai juice. Delahanty then uses the juice to create acai snack products.
The idea came from Delahanty’s observation that several snack companies were using acai berries in their products. Although Delahanty knew from the start that he wanted to build a business around Amazon fruit, it didn’t start out as an idea worthy of a shark tank.

After toying with the idea of bringing in acai berries, Delahanty knew he had to change course. When Delahanty was discussing business ideas with his parents, his father suggested some sort of acai-based dried fruit product.
“I started making acai snacks out of an old little round dryer my parents had in their basement from around the 1980s,” Delahanty said.
That was in 2014. Over the next few years, Delahanty won $20,000 in a local pitching contest and took his company to Shark Tank.
“When I was hawking my products at the local health food store, every little old lady said, ‘You should be on the Shark Tank, Sonny!'” But when Delahanty won the pitching competition, he felt more confident.

“I emailed Shark Tank,” he said. “About two months later, I was standing in front of Mark Cuban and others throwing peace fruits.”
The Sharks delivered the fruits of peace in large part because, as Delahanty put it, “we were almost a commercial enterprise with legitimate sales.” But this inexperience did not last long. As Peace Fruit continued to grow, Delahanty soon needed more help.
“I want to make sure the people I hire to help are on the same mission to strengthen our economy,” Delahanty said. “I’m very proud to say that we’re part of our economic impact in Ohio by hiring adults with disabilities to full-time jobs producing every snack that comes out of the factory.
Delahanty knew that adults with disabilities were often underemployed, and she wanted to do something to change that.

“They have a lot to offer,” he said. “I’m proud to be a part of providing something better. They’re doing a great job.”
An important part of growing peace fruits is related to the production of dried fruits, especially the accurate measurement of water activity.
“We take the business side very seriously,” Delahanty said. “Most of it is water activity.”
Because Peaceful Fruits uses whole fruit purees to make their products, they make sure that no two batches are exactly alike. But to be commercially successful, they must find a way to make shelf-safe, consistent products from these changing ingredients. In addition, Peaceful Fruits is committed to avoiding additives as much as possible, so chemically altering the ingredients is not a viable option.

“Ensuring the safety of our product is very important to us,” Delahanty said. “So it’s really important for our process to be able to meet the water activity requirements and tell us that the product is storage stable and that nothing bad is growing in it.”
As important as food safety is, Peaceful Fruits likes to create products with appealing taste and texture. Water activity measurement also ensures consistent results from batch to batch, reducing waste and improving results.
Many snack food companies use measurements other than water activity to determine product safety, but Peaceful Fruits has found that measuring water activity is the most effective way to ensure products are safe to eat, shelf-stable and consistently delicious.
“When we started, it was an ‘eyeball’ approach,” Delahanty said. “My product, if it’s not perfect pudding, it’s probably safe to eat. But “maybe safe” is not what the customer or the inspector wants to hear. So now we can check the batch and say, “We’re priced at 0.32 and we can hit this recipe for 20 minutes,” or “Our price is 0.60, which is great.

With this information, Delahanty and his team are free to get creative with different flavors, textures and products without fear of producing an unsafe product. They know they can continue using it as long as they can measure the product’s water activity.
“One of the new products we’re launching is a twist on the old ‘peel and eat,'” Delahanty said. “But we have a very different vision, which is to make it more interesting and create more colors, flavors and shapes. But for this product, water activity and moisture are really important because we don’t add sugar. So we don’t add more sugar, you need it to be the right glue.
Although Peaceful Fruits started with acai berries, they have also experimented with different fruits, flavors, textures and products to appeal to a wide range of consumers. Of course, creativity can be messy and some failures are inevitable. But accurate measurements of water activity make this change both safe and cost-effective.
“I made a lot of mistakes,” Delahanty said. “Some were cheaper, some were expensive. You shouldn’t be afraid of making mistakes. You’re going to have problems. So accept it, forgive yourself and dive in.”
